This review needs very little by way of commentary as the photographs graphically tell the story of a culinary expedition at the hands of a chef who creates sublime food of the very highest quality. That being the case it is of little surprise that, beyond the recognition of the request, dealing with the needs of a coeliac was so straightforward that I wonder whether the chef had variations in mind when he designed his set menus. Whether or not this is the case, any variation from the standard was described with absolutely no hint of judgment, something that is always massively appreciated.
The incredibly fresh ocean seafood oscietra caviar starter was such an artfully designed still life that it seemed a pity to disturb its composition. For me it was one of Jaan’s stand out dishes. It was delightfully followed by an attractively presented, cleansing salad.
The theatrical quotient was increased with the smoked organic egg amusingly presented on an egg box and tipped into the glass containing ratte potato, iberico chorizo and buckwheat at the table. This was followed by a rich foie gras with spiced pineapple and a superbly cooked fresh fillet of brill.
The only course I had a problem with was the pigeon. The breast was served very rare. Perhaps with the leg and foot as a reminder of where it came from I couldn’t get very far with this dish. Fortunately the excellent cheese board, accompanied by the best g-f bread I have ever tasted, followed swiftly.
The beautifully presented strawberry dessert and mignardises completed what was one of the best meals I have ever eaten. This is definitely a restaurant saved for the most special of occasions but if your experience is anything like ours, you will not be disappointed.
Beyond the quality of the food, the outstanding feature of this restaurant is the views from its windows. As it turned out, we were fortunate to be seated on the Marina Bay side of the restaurant, having views out in the direction of what has to be one of the world’s greatest skylines. Even in the other direction the views are also superb. Singapore Inc has upped the bling factor. Whilst this may mean its corporate electricity bill is very high it makes it an interesting city to view from 70 floors up.
